Eptatretus okinoseanus, also known as the purple hagfish, is the largest among hagfish species, reaching lengths of up to 80 cm. Its body resembles that of an eel, with four pairs of whiskers on each side of the mouth.
Purple hagfish typically inhabit the deep sea at depths ranging from 200 to 600 meters and primarily scavenge for animal carcasses on the ocean floor. Their habitat extends from the Pacific Ocean to areas around Korea.
Hagfish meat is prepared by peeling the skin, cutting it into small pieces, and grilling it with salt or placing it on a grid or griddle.
In Korean, "곰장어" (gom-jang-eo) means hagfish. It is especially popular in the Gijang area of Busan and in Shin-Okubo.
When hagfish are stimulated, they secrete large amounts of mucus from numerous pores on their lower bodies. This mucus solidifies into a gel-like consistency upon contact with surfaces. Hagfish belong to the same family of cyclostomes as lampreys and are distinct from teleost fish such as eels, moray eels, and conger eels.
