The trigger should give you monochrome without tagging it however I noticed some random prompts will trigger a random color picture. I tried increasing the training up to 8k and same seed and prompt would still give me the color the image regardless how overtrained the model was. Fortunately the fix is simple. Just up the strength to about 1.2 and you'll get the monochrome look on those pesky pictures. The other 99.5% should come out just right at strength 1.
